3 cup  fresh cauliflower
1 cup  cold water
1 each  cooking spray
1 tbsp  butter
2 tsp  Starch, arrowroot
2 cup  whole milk
0 3/4 cup  shredded cheddar cheese
0.125 tsp  paprika
3 tbsp  chopped parsley
  1. Preheat the oven to 350°F.
  2. In medium saucepan, add cauliflower and water and bring to boil. Cover, reduce heat, and simmer 8 to 10 minutes or until crisp-tender; drain.
  3. Coat 1-quart baking dish with cooking spray. Place cauliflower in dish and set aside.
  4. In small, heavy saucepan melt butter over medium heat.
  5. In measuring cup, whisk arrowroot into milk.
  6. Gradually add milk to saucepan, stirring constantly. Cook, stirring constantly, 5-8 minutes or until thickened and bubbly.
  7. Remove from heat; add 1/2 cup cheese, stirring until cheese melts.
  8. Pour cheese mixture over cauliflower, toss to coat. Sprinkle remaining 1/4 cup cheese and paprika over casserole.
  9. Bake, uncovered, for 15 to 20 minutes or until top is golden. Sprinkle with parsley.
