1 each  cooking spray
2 1/2 cup  oat bran
2 cup  white all purpose flour
2 tsp  low sodium baking powder
1 1/2 tsp  baking soda
1 tsp  cardamom, ground
2 cup  unsweetened applesauce
4 each  egg whites
0 1/2 cup  pineapple juice
0 1/2 cup  honey
2 tbsp  vegetable oil
0 1/4 tsp  almond extract
0 1/4 cup  lemon zest
  1. Preheat the oven to 400 degrees F; then lightly spray two 12-cup muffin pans with vegetable oil spray or use paper bake cups.
  2. Combine the oat bran, flour, baking powder, baking soda, and cardamom in a medium bowl.
  3. Stir together the remaining ingredients in a large bowl; then stir the dry mixture into the wet mixture until just moistened (batter should be lumpy).
  4. Fill the prepared muffin cups to almost full; then put in the oven and reduce the heat to 375 degrees F.
  5. Bake for 18-20 min, or until golden-brown; then serve warm or at room temperature.
