2 tbsp  Margarine, hard, safflower hydrog® soy & cottonseed oil stick
1 each  medium onions
1 each  medium garlic cloves
0 1/2 lb  fresh plum tomatoes
2 tsp  cornstarch
0 1/4 tsp  salt
0.125 tsp  black pepper
1 cup  cold water
0 1/4 cup  chopped parsley
  1. Melt margarine or butter in a medium saucepan. Add onion and garlic, and saute over medium high heat about 1 minute.
  2. Add tomatoes and cook another 2 minutes.
  3. Stir in arrowroot or cornstarch, salt, pepper, and water. Cook, stirring, until thickened, about 4 to 5 minutes.
  4. Stir in parsley. Transfer to a serving dish and serve hot.
