Ingredients

1 lb  Celery Root, fresh
1 lb  russet potatoes
2 tbsp  unsalted butter
2 tbsp  sour cream
1 pinch  salt
1 pinch  black pepper
1 tbsp  fresh chives
Directions
  1. Peel celery root and potatoes. Cut into 1" cubes. Wash, dry, and chop chives.
  2. In large saucepan, place celery root and potatoes. Cover with water, plus 2".
  3. Bring to boil over medium-high. Boil, partially covered, 10 minutes until fork tender.
  4. Using ladle, remove 1 cup liquid from saucepan. Set aside.
  5. Drain remaining water. Place cooked celery root and potates in large bowl
  6. Add butter, sour cream, and 1/4 cup reserved liquid. Season with salt and pepper to taste.
  7. Mash with hand masher, adding reserved liquid as needed.
  8. Transfer to warm serving dish. Sprinkle with chopped chives.
