0 1/4 each  red onion
1 each  cooking spray
3 each  eggs
0 3/4 cup  fresh chopped spinach
1 oz  crumbled feta cheese
Directions
  1. Coat skillet with cooking spray. Add chopped onions and sauté, over medium heat, 1-2 minutes. Remove from pan. Set aside.
  2. In small bowl, whisk eggs. Lightly recoat skillet and return to heat. Pour eggs into skillet.
  3. Allow eggs to cook, lifting edges gently to allow eggs to flow toward bottom of skillet. Cook until eggs are soft and not quite firm, 1-2 minutes.
  4. Add onions, spinach, and feta cheese on top of eggs. Cook until eggs are firm, 1 minute.
  5. Fold omelet in half and slide onto serving plate.
