1 each  cooking spray
1 lb  Tomatoes, green, fresh, whole, medium
0 1/4 cup  liquid egg substitute
2 tbsp  fat free milk
0 1/2 cup  cornmeal
0 1/4 cup  white all purpose flour
1 tsp  poppy seeds
0 1/4 tsp  salt
0.125 tsp  black pepper
Directions
  1. Preheat the oven to 450 degrees F, and lightly spray a baking sheet with vegetable oil spray.
  2. Cut the tomatoes into 1/4-inch-thick slices.
  3. Stir together the egg substitute and milk in a small bowl.
  4. Combine the cornmeal, poppy seeds, flour, salt, and pepper in a pie pan or shallow baking pan.
  5. Place the tomato slices, egg mixture, cornmeal mixture, and baking sheet in order in a line.
  6. Dip the tomato slices in the egg mixture using tongs, letting any excess drip off.
  7. Lightly coat both sides of the tomatoes with the cornmeal mixture, and place the tomatoes in a single layer on the baking sheet.
  8. Bake for 10 minutes, flip them over, then bake for 5 minutes, or until golden-brown.
