2 each  egg whites
1 cup  low fat buttermilk
1 1/2 cup  Cereal, 100% Bran
3 tbsp  molasses
2 tbsp  canola oil
1 tsp  grated orange peel
0 1/2 cup  white all purpose flour
0 1/2 cup  whole wheat flour
0 1/2 cup  sweetener (sugar substitute)
1 tsp  baking soda
1 1/2 tsp  low sodium baking powder
0 1/2 tsp  cream of tartar
0 1/4 cup  seedless raisins
1 each  cooking spray
  1. Preheat oven to 375 degrees F.
  2. Whip the egg whites and buttermilk in a medium bowl. When the mixture is frothy, add bran cereal, molasses, orange peel, oil, and raisins (or cranberries, etc). Set the mixture aside for 5 minutes.
  3. In a large bowl, mix flour, Splenda, baking powder and soda, and cream of tarter.
  4. Stir both mixtures together until the dry ingredients are moistened (do not over mix).
  5. Spray non-stick cooking spray on 8 muffin tins, and fill them 3/4 of the way with the batter.
  6. Bake for 18 minutes, or untl a toothpick comes out clean.
