Dressing
2 tbsp  fresh lemon juice
2 tbsp  low sodium vegetable broth
1 1/2 tbsp  vegetable oil
0 1/2 tsp  salt
0 1/4 tsp  black pepper

Salad
2 cup  fresh watercress, chopped
1 each  fresh carrots
1 each  medium apples
1 each  medium apples
2 tbsp  fresh lemon juice
0 1/4 cup  chopped walnuts
Directions
  1. Combine all dressing ingredients and mix well.
  2. Place watercress around the outside edge of a large platter. Scatter carrot next to the watercress. In a small bowl, toss shredded apples with lemon juice. Spoon apples into center of platter. Scatter nuts on top of apples. Pour dressing over the salad and serve immediately.
