2 lb  fresh whole beets
1 each  Oranges, medium, fresh
1 tbsp  sugar
1 tbsp  cornstarch
0 1/4 tsp  salt
2 tsp  grated orange peel
0.6667 cup  orange juice
1 tsp  Margarine, 80% fat
Directions
  1. Cut off all but 1 to 2 inches of stems from the beets.
  2. Bring 2 quarts water to a boil over high heat in a large saucepan; then reduce the heat and simmer, covered for 40 to 50 minutes, or until tender.
  3. Drain the beets. Let cool enough to handle. Then slip the skins off, and slice the beets into wedges. Cover to keep warm.
  4. Meanwhile, stir together the sugar, cornstarch, and salt in a small saucepan; then slowly add the orange zest and orange juice, stirring until smooth.
  5. Cook over medium heat for 5 to 8 minutes, or until thickened, stirring constantly.
  6. Add the margarine and stir until melted; then pour the sauce over the warm beets.
  7. Garnish with the orange sections if desired.
