Ingredients Directions
  1. Place a large nonstick saucepan over medium heat, and pour the oil into the saucepan, swirling to coat the bottom.
  2. Cook the onion and bell pepper for 3 to 4 minutes, or until tender-crisp, stirring occasionally.
  3. Stir in the broth, water, and bacon bits, and bring to a boil over high heat, stirring occasionally.
  4. Gradually add the cornmeal to the pan, stirring constantly.
  5. Reduce the heat and simmer for 15 to 20 minutes, or until the vegetables are tender and the cornmeal mixture is soft and creamy, stirring occasionally.
  6. Stir in the tofu and greens, and cook over medium-high heat for 6 to 8 minutes, or until the greens are tender, stirring occasionally.
  7. Stir in the Parmesan cheese and margarine, and cook for 1 to 2 minutes, or until the cheese is melted, stirring occasionally.
