Ingredients Directions
  1. In small microwave-safe bowl, heat preserves in microwave, on low power in 15 second intervals, until hot.
  2. Remove bowl from microwave, stir in horseradish, set aside.
  3. Rub jerk seasoning into salmon to coat all sides.
  4. Heat large nonstick skillet over medium-high until hot enough to sizzle a drop of water.
  5. With oven mitt, briefly remove pan from heat and lightly coat with olive oil spray.
  6. Place salmon in pan, smooth side down.
  7. Return to heat and cook 2 minutes per side.
  8. Reduce heat to medium, cook 2 - 3 additional minutes per side, or until salmon is opaque.
  9. Transfer to serving plate, top with sauce and serve immediately.
