3 each  rye crispbread crackers
2 tbsp  liquid egg substitute
0 1/4 lb  tilapia fillets
1 each  medium lemons
  1. Place the crumbs in a medium shallow bowl. Place the egg substitute in another bowl.
  2. Dip one tilapia filet into the egg until it is coated. Then dip into the crumb mixture to coat (there will be some left over). Repeat with remaining fillets.
  3. Lightly spray a small nonstick pan with olive oil spray. Place it over medium-high heat until it is hot enough for a spritz of water to sizzle on it.
  4. Place the fillets in the pan. Cook for 2 minutes per side then reduce the heat to medium. Cook for 3-4 minutes per side, or until the fillets flake easily with a fork.
  5. Serve immediately with lemon wedges or salsa if desired.
