1 tsp  vegetable oil
1 pinch  chile peppers, anaheim
1 each  fresh leeks
2 each  medium garlic cloves
1 pinch  salt and pepper
1 cup  low fat unsalted chicken broth
2 each  fresh tomatoes
0 1/2 tsp  ground cumin
1 1/2 lb  halibut fillets
1 each  medium limes
12 each  medium corn tortilla
  1. Start off by heating the oil in a large skillet over medium heat. Then saute the chile, leek, and garlic until the are tender and lightly browned; season with salt and pepper.
  2. Next mix the tomatoes and chicken broth into the skillet and season with cumin. Bring to a boil, then reduce the heat to low.
  3. Place the halibut into the mixture and sprinkle with lime juice. To finish, cook 15 to 20 minutes until the halibut is easily flaked with a fork. To serve, wrap in warmed corn tortillas and enjoy!
