0.3333 cup  canola oil
0 3/4 cup  unpacked light brown sugar
0 3/4 cup  sugar
1 each  eggs
1 each  egg whites
1 tsp  vanilla extract
1 1/2 cup  white all purpose flour
1 tsp  ground cinnamon
1 tsp  baking soda
1 1/2 cup  Oats, rolled, old fashioned
0 1/2 cup  chopped pecans
1 each  cooking spray
Directions
  1. Preheat the oven to 350 degrees F.
  2. Use a large bowl, and stir together the oil, brown sugar, sugar, egg, egg white, and vanilla.
  3. In a separate small bowl, combine the flour, cinnamon, and baking soda.
  4. Add the flour mixture to the sugar mixture. Add the oats and pecans, mix well.
  5. Coat a cookie sheet with non-stick cooking spray and drop cookie batter by rounded teaspoonfuls onto baking sheet.
  6. Bake for 10 to 12 minutes, or until lightly browned. Remove from oven and let cool on wax paper.
