3 each  medium cucumber
0 1/2 each  red onion
3 cup  cold water
1 1/2 cup  distilled white vinegar
3 each  SPLENDA┬« No Calorie Sweetener packets
0 1/2 tsp  salt
0 1/2 tsp  black pepper
  1. In a plastic storage container, mix the cucumbers, onion, water, vinegar, sugar substitute, salt and pepper. Mix well.
  2. Cover the container with a lid. Refrigerate for at least a few hours or as long as 5 days. Serve cold.
