  1. Rinse and drain arugula.
  2. Cut artichoke hearts into quarters.
  3. Cut mozzarella cheese into 1/2" pieces.
  4. Cut roasted red peppers into 2" pieces. Cut or tear prosciutto into 1" pieces.
  5. In large bowl, combine all ingredients. Toss gently.
  6. Chill 30 minutes. Serve.
