Ingredients Directions
  1. Lightly spray a small, nonstick skillet with olive oil spray. Set over medium heat for 30 seconds.
  2. Add the onion and garlic. Cook, stirring periodically, for 4-6 minutes, or until tender. Do not allow to brown.
  3. Add the rice and spinach. Cook, stirring constantly, for 3 to 5 minutes, or until the spinach is nearly completely wilted. Stir in the cheese, season with salt and pepper. Serve immediately.
