Ingredients Directions
  1. Heating the oil over medium heat in a large, heavy-based saucepan and sauté the onion, garlic, and ginger for about 2 minutes.
  2. Add the sweet potatoes and cabbage, and when the vegetables start to soften, add the paprika and cayenne.
  3. Mix well to coat the vegetables with the spices and then add the tomatoes and pineapple juice.
  4. Cover the pan and then simmer until the vegetables are soft, roughly 35 to 40 minutes.
  5. Next, stir in the peanut butter until it combines, adding a little water if it is too thick. Season the mix with pepper, and then transfer to serving bowls.
  6. To serve, toss the carrot, beet, and banana in the lime juice and scatter over the vegetables. Garnish with cilantro, if desired.
