1 cup  Couscous, cooked
1 cup  Peas, chickpea, canned
0 1/2 cup  chopped parsley
0 1/2 cup  fresh cilantro
1 tbsp  ground cumin
0 1/2 each  medium red bell peppers
0 1/2 cup  medium green bell peppers
1 cup  dried mixed fruit morsels
2 tbsp  pistachios
1 oz  pine nuts
  1. Cook the couscous according to the package directions and make sure it is dry before you use it.
  2. Put the couscous in a large serving bowl and combine well with the chickpeas, cilantro, parsley, cumin, peppers, dried fruit, pistachios, and pine nuts.
  3. To make the dressing, put the oil and lemon juice in a screw top jar and shake well. Season with the pepper, and then pour over the couscous.
