  1. Preheat the oven to 400 degrees F, and arrange the sweet potato slices in even layers on the bottom of a nonstick square or 8-inch round baking pan.
  2. In a small bowl, whisk together the half-and-half, brown sugar, orange zest, cinnamon, and nutmeg.
  3. Pour the mixture over the sweet potatoes, and dot with margarine.
  4. Bake, uncovered, for 35 to 40 minutes, or until tender. Stir once halfway through the baking time.
