1 each  cooking spray
0 1/2 cup  fresh chopped onion
0.3333 cup  chopped green bell peppers
0.3333 cup  chopped red bell peppers
0 1/2 cup  Rice, brown, long grain, dry
2 each  medium garlic cloves
1 1/2 cup  low fat unsalted chicken broth
0 1/4 tsp  salt
0.125 tsp  ground cayenne (red pepper)
1 cup  fresh okra
1 each  fresh plum tomatoes
Directions
  1. Over medium-high heat, heat a medium saucepan and lightly spray with vegetable oil.
  2. Heat and cook the onion and bell peppers for 5 minutes while stirring occasionally.
  3. Stir in the rice and garlic and cook for 1 minute.
  4. Stir in the broth, salt, and cayenne and bring to a boil over high heat.
  5. Cover and reduce the heat and simmer for 30 minutes.
  6. Stir in the okra and cook, covered, for 5 to 10 minutes, or until the rice is tender and the liquid is absorbed.
  7. Stir in the tomato and let stand for 5 minutes.
