4 each  eggs
1 each  cooking spray
0.3333 cup  whole milk
1 pinch  black pepper
1 tbsp  fresh chives
1 tbsp  fresh dill weed
3 1/2 oz  smoked salmon
1 cup  fresh baby spinach
2 piece  seven grain bread, thick slices
  1. In small bowl, whisk milk, eggs, pepper, chives, and dill.
  2. Coat large skillet with cooking spray and heat over medium.
  3. Add egg mixture. Cook about 30 second, or until eggs start to set around edges.
  4. Using spatula, fold eggs over gently, and repeat folding process until eggs are cooked.
  5. When finished, the eggs will still be quite soft.
  6. Add salmon and spinach, and cook until salmon is heated through and the spinach is wilted.
  7. Serve on top of your choice of bread (optional).
