1 lb  extra lean ground beef (5% fat)
0 1/2 each  small onions
2 each  medium garlic cloves
0 1/2 tsp  greek seasoning
2 tbsp  fresh lemon juice
14 oz  fat free unsalted beef broth
8 oz  couscous
4 cup  salad greens
1 cup  fresh cherry tomatoes
4 each  fresh green onions
0 1/2 each  large yellow bell pepppers
2 each  radishes
1 each  small cucumber, peeled
3 tbsp  chopped parsley
2 tbsp  fresh basil
1 tbsp  balsamic vinegar
1 tbsp  olive oil
1 tbsp  crumbled feta cheese
Directions
  1. Brown the beef with the onion and garlic in a large, nonstick skillet over medium high heat for about 5 minutes. Drain.
  2. Add the Greek seasoning and lemon juice, stirring well.
  3. In a separate pot, bring the beef broth to a boil. Add the couscous and cook according to the package directions.
  4. Combine the beef and the couscous. Stir well.
  5. Arrange lettuce on a platter and top with the beef, cherry tomatoes, green onions, pepper, radishes, cucumber, parsley, and basil. If desired, drizzle with balsamic vinegar and olive oil and top with feta cheese.
