1 tsp  olive oil
1 tsp  minced garlic
1 each  cooking spray
0 1/2 each  medium onions
2 tsp  fresh thyme
1 lb  lean ground beef (10% fat)
2 each  eggs
1 cup  tomato sauce, low sodium
1 tbsp  tomato paste
2 tsp  Worcestershire sauce
0 3/4 cup  bread crumbs
0.125 tsp  salt
0.125 tsp  black pepper
0 1/4 cup  unsweetened ketchup
Directions
  1. Preheat the oven to 375°F.
  2. Dice onion.
  3. In small skillet, heat olive oil over medium. Add diced onions. Cook about 3 minutes until softened and translucent.
  4. Line roasting pan with foil.
  5. In large bowl, with hands, mix onions, garlic, thyme, beef, eggs, 1/2 cup tomato sauce, tomato paste, Worcestershire sauce, bread crumbs, salt, and pepper.
  6. Divide meat mixture into four portions. Form into loaves. Place on prepared roasting pan. Bake 20 minutes.
  7. While loaves are baking, in small saucepan, heat ketchup and remaining tomato sauce. Simmer over low heat for 5 minutes, stirring frequently.
  8. Remove roasting pan from oven. Brush tomato-ketchup mixture over each meatloaf. Bake 10 more minutes until meat thermometer reads 160°F.
  9. Remove from oven. Let rest for 5 minutes. Cut each loaf in half and serve.
