1 lb  boneless skinless chicken breasts
1 tsp  cooking sherry
1 each  egg whites
2 tsp  peanut oil
0.125 tsp  sesame oil
0.3333 cup  ground walnuts
1 each  cooking spray
  1. Preheat oven to 350°F.
  2. Lightly coat baking sheet with cooking spray.
  3. Cut chicken into bite sized pieces, sprinkle with sherry. Set aside.
  4. Place walnuts in small shallow dish.
  5. In small bowl, beat egg white and oils until frothy.
  6. Fold chicken pieces into egg mixture, remove and roll individual pieces in ground walnuts.
  7. Arrange chicken pieces on baking sheet, cook 10-15 minutes, or until walnuts are lightly browned and chicken juices run clear.
