1 lb  boneless skinless chicken breasts
1 tsp  cooking sherry
1 each  egg whites
2 tsp  peanut oil
0.125 tsp  sesame oil
1/2 cup  ground walnuts
1 each  cooking spray
  1. Preheat oven to 400°F.
  2. Lightly coat baking sheet with cooking spray.
  3. Cut chicken into bite sized pieces and place in small bowl. Sprinkle with sherry. Set aside.
  4. Place walnuts in small shallow dish.
  5. In small bowl, beat egg white and oils until frothy.
  6. Pour egg mixture over chicken. Gently toss to coat. Remove chicken from bowl, one piece at a time, and roll in ground walnuts.
  7. Place coated chicken on baking sheet, cook 10 minutes, or until walnuts are lightly browned and chicken reaches internal temperature of 165°F.
