1 each  cooking spray
10 oz  Vegetables, mixed, classic, frozen
0 1/2 cup  fresh chopped onion
0 1/2 cup  fresh chopped green onion
1 cup  unsalted tomato juice
0.125 tsp  celery seeds
0.125 tsp  dried basil
0.125 tsp  oregano leaves
0.125 tsp  chopped parsley
0 1/4 tsp  garlic powder
3 tbsp  grated Parmesan cheese
  1. Preheat oven to 350°F.
  2. Lightly coat large casserole dish with cooking spray.
  3. In casserole dish, layer frozen mixed vegetables, onion, and pepper.
  4. In small bowl, combine tomato juice, herbs, garlic, and 2 tbsp Parmesan cheese.
  5. Pour tomato juice mixture over vegetables, cover and bake 1 hour.
  6. Remove cover, sprinkle with remaining Parmesan cheese.
  7. Bake additional 10 minutes uncovered, until liquid thickens and mixture begins to bubble.
