2 tbsp  olive oil
2 cup  Onion, yellow, fresh, sliced
0 1/2 cup  sliced carrots
2 each  large garlic cloves
4 cup  Tomatoes, plum, whole, peeled, canned, Alta Cucina, FS
1 tsp  ground oregano
1 tsp  dried basil
0 1/4 tsp  sugar
1 pinch  kosher salt
1 pinch  black pepper
1 pinch  anise seed
  1. Begin by heating the olive oil over medium high heat in a large, deep saucepan or skillet.
  2. Add the onions, garlic, and carrots and sauté until the onions are transparent.
  3. Next, puree the tomatoes in a food processor and then add the herbs and sugar to the onion mixtures along with the salt, if using.
  4. Simmer partially covered for 45 minutes.
