24 oz  extra lean beef tenderloin
0 3/4 tsp  kosher salt
0 3/4 tsp  black pepper
1 each  red onion
2 tbsp  Oil, olive, extra virgin
0 1/4 cup  balsamic vinegar
2 tbsp  crumbled gorgonzola cheese
  1. Rub steaks with 1/2 teaspoon salt and 1/2 teaspoon pepper, cover, and chill.
  2. Place onion slices on a baking sheet lined with aluminum foil and coated with cooking spray. Drizzle with 1 tablespoon olive oil, the vinegar, and the remaining salt and pepper. Toss to coat.
  3. Bake onions, stirring occasionally, at 375 degrees F for 20 minutes (onions should be tender). Remove from oven but keep warm.
  4. Cook steaks in the remaining 1 tablespoon olive oil in a large skillet coated with cooking spray 5-7 minutes per side over medium-high heat. Top steaks with onion mixture and cheese.
