1 1/4 lb  salmon fillet
2 tsp  extra virgin olive oil
1 cup  fresh chives
1 pinch  kosher salt
1 pinch  white pepper
1 tbsp  fresh sage
  1. Preheat oven to 250 degrees F.
  2. Begin by rubbing 1/2 teaspoon on the olive oil onto the flesh side of each fillet. Then, completely cover the fillets with the chives and press them into the flesh gently. If desired, season them with the salt and pepper at this time.
  3. Place the fillets skin side down on a nonstick oven safe skillet and roast for 25 minutes.
