2 tsp  olive oil
1 tbsp  shallots, chopped
2 tsp  fresh ginger root
0.3333 cup  white wine
1 each  Peaches, fresh, medium, FDA
1 tbsp  frozen orange juice concentrate
1 tsp  liquid aminos seasoning
0 1/2 tsp  cornstarch
  1. In a nonstick skillet over medium heat, heat the olive oil and saute the ginger and shallot. Add the white wine and simmer until the solution is reduced by half.
  2. Add the diced peach, orange juice concentrate, and liquid aminos. Return to a simmer while stirring occasionally.
  3. In a seperate container, combine the cornstarch with a tablespoon of the sauce. Stir to creat a slurry, and mix well to remove any lumps.
  4. Add the slurry to the sauce and simmer until the mixture thickens.
  5. Transfer the mixture to a food processor or blender and blend until smooth.
