1 serving  roasted red peppers with brine
0 1/2 lb  fresh apricots
1.3333 cup  apple cider vinegar (unfiltered)
0.6667 cup  cold water
0.3333 cup  sugar
0 1/2 cup  packed light brown sugar
2 tbsp  light corn syrup
2 tbsp  fresh ginger root
1 tsp  salt
1 tbsp  mustard seed
4 each  scallions
1 tsp  minced garlic
0 1/2 tsp  ground cinnamon
  1. Combine all ingredients in a large pot and bring to a boil. Reduce heat, then simmer covered for 30 minutes.
  2. Uncover, then simmer for another hour.
  3. Pour into a food processor or blender and process to desired consistency.
