Ingredients

2 each  medium limes
6 oz  rice vermicelli
2 each  medium garlic cloves
8 each  scallions
2 each  Chili Peppers, red, hot, fresh
1 tbsp  peanut oil
2 tsp  sesame oil
2 1/2 tbsp  fish sauce
3 tbsp  fresh cilantro
Directions
  1. In a large pan of boiling water, drop in the noodles. Take the pan off the heat and soak for 3 minutes. Drain the noodles well, transfer them into a salad bowl. Let cool to room temperature.
  2. Finely grate the zest from 1 lime and squeeze the juice from both limes and add to the noodles.
  3. Add the remaining ingredients. Toss together lightly and serve.
