16 oz  ground lamb
1 pinch  salt
1 cup  fresh chopped onion
2 tsp  ground cumin
1 tsp  ground allspice
0 1/4 tsp  ground cayenne (red pepper)
4 tbsp  fresh cilantro
1 each  large whole wheat pitas
8 each  large butterhead lettuce leaves
1 each  red onion
2 oz  plain nonfat yogurt
1 each  medium lemons
Directions
  1. To prepare: Place the lamb, salt, onion, cumin, allspice, cayenne, and cilantro in a food processor and work until well blended.
  2. With wet hands, shape the mixture into 20 meatballs and cook over hot coals or in a nonstick frying pan for 10 minutes, turning frequently, until well browned.
  3. Warm the pita in the frying pan for 1-2 minutes on each side, until softened and warmed through. Scatter lettuce leaves and the red onion over the pita. Arrange the meatballs on top and drizzle with a little yogurt. You can roll the flat breads up into a handheld snack (if desired). Serve with the lemon wedges.
