1 1/4 lb  fresh cod fillets
4 tbsp  ginger root slices
6 each  scallions
2 each  medium garlic cloves
2 tbsp  low sodium soy sauce
1 tbsp  white wine vinegar
1 tsp  sesame oil
1 tsp  hot red pepper flakes
1 tbsp  fresh cilantro
  1. Preheat oven to 400°F. Arrange each cod fillet in the center of its own large square of foil.
  2. Divide and scatter ginger, scallions, and garlic over each fillet.
  3. In small bowl, whisk soy sauce, vinegar, and sesame oil.
  4. Divide and drizzle over each fillet. Sprinkle with a few red pepper flakes (optional).
  5. Pull corners of foil together and fold over edges to tent each fillet.
  6. Place fish packets on oven proof sheet and bake in preheated oven 20 minutes.
  7. Remove fish from packets and transfer to warm serving plates. Garnish with cilantro.
