3 each  Jicama, fresh, medium
2 tbsp  fresh lime juice
3 each  medium oranges
1 each  Greens, watercress, fresh, sprig
0 1/2 cup  red wine vinegar
0 1/2 tsp  ground cumin
0.3333 cup  extra virgin olive oil
1 each  head Boston lettuce
Directions
  1. Toss the jicama, oranges, and watercress in a bowl with lime juice.
  2. In a small bowl, mix the vinegar, cumin, and some salt and pepper and then whisk in olive oil until the mixture thickens.
  3. Taste the mixture to adjust flavor as needed, pour over the first mixture, and toss.
  4. In a serving bowl, separate and arrange the lettuce and pour the mixture over it.
