0 3/4 cup  white all purpose flour
2 tsp  sugar
1 tsp  low sodium baking powder
0.125 tsp  baking soda
1 each  Salt, table, dash serving
2 tbsp  unsalted butter
0 1/4 cup  low fat buttermilk
1 each  raw egg yolks
1 each  cooking spray
4 oz  Neufchatel cream cheese
1 cup  lowfat plain yogurt
3 tbsp  Preserves, strawberry, fruit sweetened
1 1/2 cup  Raspberries, fresh
Directions
  1. Preheat oven to 425 degrees F.
  2. Stir together flour, sugar, baking powder, baking soda, and salt in a medium bowl.
  3. Using a pastry blender, cut in butter until mixture resembles coarse crumbs.
  4. Make a well in center of flour mixture.
  5. In a small bowl, combine buttermilk and egg yolk.
  6. Add to flour mixture all at once, stirring until just moistened.
  7. Lightly coat a baking sheet with nonstick cooking spray; set aside.
  8. On a lightly floured surface, pat or roll dough to 1/2-inch thickness.
  9. Using a floured 1 1/2-2-inch cooke cutter, cut dough into desired shapes, rerolling scraps as necessary.
  10. Place on prepared baking sheet.
  11. Bake 7 to 8 minutes or until golden.
  12. Cool on a wire rack.
  13. In a medium mixing bowl, beat cream cheese with an electric mixer on medium speed for 30 seconds.
  14. Gradually beat in yogurt and preserves until smooth.
  15. Divide shortcakes among 6 dessert plates, top with fresh fruit and yogurt mixture. Serve immediately.
