4 tsp  olive oil
4 each  medium potatoes
0 1/2 tsp  salt
0.125 tsp  black pepper
0 1/4 cup  grated Parmesan cheese
  1. Preheat oven to 450 degrees.
  2. Line a 15x10x1-inch baking pan with heavy-duty foil, brush with 2 teaspoons of the oil and set aside.
  3. Cut potatoes lengthwise into 1/2-inch-thick wedges.
  4. Transfer to a large bowl.
  5. Add remaining 2 teaspoons of oil, toss to coat.
  6. Sprinkle potato wedges with salt and pepper, tossing to coat.
  7. Arrange potato wedges in a single layer in prepared baking pan.
  8. Bake for 12 minutes.
  9. Carefully turn potato wedges and sprinkle with cheese.
  10. Bake for 10 to 12 additional minutes or until potatoes are tender and golden.
  11. Serve immediately.
