1 each  cooking spray
1 tsp  olive oil
1 1/2 cup  fresh mushrooms
1 cup  fresh chopped celery
1 cup  fresh chopped onion
1 tsp  minced garlic
0 3/4 lb  extra lean ground beef (5% fat)
0 3/4 lb  ground turkey
1 cup  no-salt tomato sauce
0 1/2 cup  liquid egg substitute
0 3/4 cup  Bread Crumbs, white, soft
0 1/4 cup  chopped parsley
0 1/2 tsp  dried basil
0 1/2 tsp  black pepper
0 1/4 tsp  salt
  1. Preheat oven to 325 degrees.
  2. Coat a large nonstick skillet with cooking spray, and add oil. Place over medium-high heat until hot.
  3. Add mushrooms, celery, onion, and garlic and cook 5 to 10 minutes or until vegetables are tender, stirring often. (Add 1 to 2 tablespoons of water during cooking, if necessary). Set mushroom mixture aside.
  4. In a large bowl combine ground round, turkey, ½ cup tomato sauce, egg substitute, breadcrumbs, parsley, basil, pepper, and salt.
  5. Add mushroom mixture, stirring well.
  6. Press mixture into a 9- x 5- x 3-inch loafpan coated with cooking spray.
  7. Top evenly with remaining ½ cup tomato sauce.
  8. Bake at 325 degrees for 1 hour. Let stand in pan for10 to 15 minutes before slicing.
