Ingredients Directions
  1. Preheat oven to 350 degrees.
  2. In a medium bowl combine egg substitute, all-purpose flour, margarine, Dijon mustard, and hot sauce, stirring well with a wire whisk.
  3. Stir in cottage cheese, Monterey Jack cheese, green chiles and roasted red pepper.
  4. Pour mixture into a 9 inch pie plate coated with coated with cooking spray, sprinkle with Parmesan cheese.
  5. Bake at 350 degrees for 30 to 32 minutes or until set. Let stand for 10 minutes before serving.
