6 oz  monkfish
3 tbsp  pistachios
1 oz  bread crumbs
3 oz  sweet potatoes
2 oz  sugar-free maple syrup
1 tsp  black pepper
5 oz  fresh green beans
1 1/2 oz  shallots, chopped
1 1/2 tsp  olive oil
  1. Mix together breadcrumbs and pistachios; coat both sides of the fish in this breading mixture. Bake the fillet in a 375 degree F oven for 8 to 10 minutes or until cooked through.
  2. Bake sweet potato in a 350 degree F oven until tender when touched slightly. Cook time depends on size (a 3 oz. potato should take about 30 minutes). Puree the cooked potato and maple syrup until it reaches your desired consistency, seasoning with black pepper.
  3. Saute shallots in olive oil in a hot sauce pan. Add green beans and cook until tender (about 5 to 7 minutes).
