5 1/2 oz  monkfish
2 1/2 tbsp  pistachios
0 3/4 oz  Bread Crumbs, white, very low sodium
1 each  sweet potatoes
0.125 oz  sugar-free maple syrup
0 3/4 tsp  black pepper
1.3333 oz  fresh green beans
2 3/4 tbsp  shallots, chopped
1 tsp  olive oil
Directions
Monkfish
  1. Mix together breadcrumbs and pistachios; coat both sides of the fish in this breading mixture. Bake the fillet in a 375 degree F oven for 8 to 10 minutes or until cooked through.
Sweet Potato
  1. Bake sweet potato in a 350 degree F oven until tender when touched slightly. Cook time depends on size (a 3 oz. potato should take about 30 minutes). Puree the cooked potato and maple syrup until it reaches your desired consistency, seasoning with black pepper.
Green beans
  1. Saute shallots in olive oil in a hot sauce pan. Add green beans and cook until tender (about 5 to 7 minutes).
