0 1/2 oz  plain nonfat yogurt
0 3/4 tsp  dijon mustard
0.125 tsp  ground tarragon
0 1/2 oz  Canadian bacon
2 piece  fresh tomato slices
1 each  Eggs, poached, large
0 1/4 cup  ground paprika
1 each  English Muffin, mixed grain
0 1/2 each  Cheese, Swiss, thin slice
3 each  egg whites
  1. Preheat broiler.
  2. Place muffin halves on backing sheet or broiler pan.
  3. Combine yogurt, mustard, and tarragon in a small bowl; stir until well blended. Spread half of yogurt mixture evenly over each muffin half. Top each muffin half with Canadian bacon slice and tomato slice.
  4. Top each tomato slice with cheese slice half. Place muffin halves on broiler pan broil 4 inches from heat source 1 minute until cheese begins to brown slightly. Top with poached egg and sprinkle with paprika if desired.
