6 3/4 oz  lean center loin pork chop/roast
1 tbsp  fresh lemon peel
0 1/4 cup  unsweetened applesauce
0 1/4 tsp  ground cinnamon
0 1/4 cup  Onion, vidalia, fresh, chopped
0 3/4 cup  Rice, wild, cooked
1 tbsp  black pepper
1 each  cooking spray
Directions
Pork Chop
  1. Season the pork chop with pepper. Then sear in a hot saute pan that has been sprayed with cooking spray.
  2. Let pork chop cool briefly, about 3 minutes. Sprinkle lemon zest on both sides and finish in a 350 degree F oven for 6 to 8 minutes or until cooked through.
Topping
  1. Mix applesauce and cinnamon in a small saucepan and heat it up. Spray a nonstick saute pan with cooking spray and saute onions for 2 to 3 minutes or until tender. Serve hot applesauce and onions over the pork chop.
Rice
  1. Prepare the rice according to the package and serve alongside the pork.
