1 lb  lean ground beef (10% fat)
1 cup  fresh chopped onion
0 1/2 tsp  minced garlic
0 1/2 tsp  ground cumin
1 pinch  salt and pepper
3 cup  Rice, white, short grain, cooked
0 1/2 each  Lettuce, red leaf, fresh, head
2 each  medium tomatoes
0 1/2 cup  low fat cheddar cheese, shredded
0 1/2 cup  fresh chopped red onion
0 1/4 cup  fat free sour cream
0 1/4 cup  Salsa
  1. Using a large skillet coated with nonstick cooking spray, cook the meat, onion, and garlic over medium heat, stirring to crumble. Cook 5 to 7 minutes or until the meat is done. Next, drain any excess fat, and then add the cumin, salt, pepper, and rice.
  2. Remove from the heat, and let cool. In a large bowl, mix the lettuce, tomatoes, cheese, red onion, and the rice mixture. Then, in a separate bowl, combine together the sour cream and salsa, and toss lightly with the lettuce-rice mixture. Serve immediately, with extra salsa and chips, if desired.
