6 oz  package wild rice blend
2 cup  cooked white rice
0 1/2 cup  fresh chopped red onion
0 1/4 cup  fresh chopped green onion
1 each  medium red bell peppers
1 each  chopped green bell peppers
0 1/4 cup  chopped parsley
0 1/2 tsp  minced garlic
30 oz  Peas, black eyed, canned
0 1/4 cup  olive oil
0.3333 cup  red wine vinegar
1 tbsp  dijon mustard
2 each  whole jalapeno pepper
1 pinch  salt and pepper
Directions
  1. Cook the rice mix according to the instructions on the package, omitting margarine; cool.
  2. Mix with the white rice, onion, green onion, bell peppers, parsley, garlic, and black-eyed peas.
  3. In a small bowl, mix the olive oil, red wine, vinegar, mustard, jalapeno pepper, salt and pepper, and toss with the rice mixture, and refrigerate until serving.
