Ingredients Directions
  1. Preheat oven at 350 degrees F.
  2. Cut four 10-inch square pieces of aluminum foil; coat one side of each with cooking spray. Arrange one fish fillet in the center of each piece of foil.
  3. Combine rice and next 6 ingredients. Spread one-fourth of mixture over each fillet. Fold in sides of each fillet; roll up, and secure with wooden picks. Wrap each fish roll in aluminum foil, sealing ends of foil securely.
  4. Place foil packets in an 8-inch square pan, and bake at 350 degrees F for 15 to 20 minutes or until fish flakes easily when tested with a fork.
  5. Remove fish rolls from foil; arrange on a serving platter. Serve with lemon wedges.
