Ingredients Directions
  1. Sauté the onion and garlic in a cooking spray coated pot over medium heat until tender about 3 to 5 minutes.
  2. Add the carrot, potato, vegetable broth, tomato sauce, salsa, oregano, cumin, and corn, and bring the mixture to a boil, lower the heat, and simmer for 20 minutes, or until the carrot and potato chunks are tender.
  3. When serving, sprinkle each bowl with the green onion and cheese.
