13 1/4 oz  Dreamfields Penne Rigate
3 tbsp  peanut oil
1 oz  mint
2 each  whole jalapeno pepper
2 tbsp  fresh cilantro
0 1/4 each  small cucumber, peeled
0 1/2 cup  canned palm hearts
2 tbsp  peanuts
1 tsp  fresh lemon peel
3 oz  cold water
2 tbsp  soy sauce
1 tbsp  fresh lemon juice
  1. Cook pasta according to package directions.
  2. Meanwhile, heat oil in 12-inch skillet over medium heat. Cook mint, peppers and 1 tablespoon cilantro 3 minutes, stirring often. Add cucumber, hearts of palm, 1 tablespoon chopped peanuts and lemon zest. Pour in water, soy sauce and lemon juice. Cover and cook 5 minutes.
  3. Drain pasta and add to pan. Toss well and cook 3 minutes longer over high heat. Top with garnish of cilantro and peanuts.
