  1. Preheat the boiler, and season the chicken with the salt and pepper, and place in a 3-quart oblong pan, and cover with the sliced onion, and broil until the chicken is brown, 5 to 7 minutes.
  2. Meanwhile, use a medium saucepan, and mix the water, chili sauce, brown sugar, sherry, and cherries over low heat, until it is melted together.
  3. When the chicken is brown, remove and discard the onion and transfer the chicken to a baking dish; lower the oven temperature to 325ºF and pour the sauce over the chicken and bake covered for 1 1/2 hours, or until chicken is very tender. Serve.
