6 each  boneless skinless chicken breasts
1 pinch  black pepper
1 pinch  salt
1 tbsp  olive oil
6 each  fresh green onions
2 tbsp  fresh lemon juice
2 tbsp  chopped parsley
1 tbsp  dijon mustard
0.3333 cup  low sodium chicken broth
  1. Place chicken breasts between sheets of waxed paper, and pound slightly with mallet to flatten, if desired.
  2. Sprinkle with salt and pepper.
  3. In large skillet, heat olive oil over medium. Add chicken and cook about 7 minutes per side until cooked thoroughly. Remove chicken fromskillet, and set aside.
  4. Return skillet to stovetop. Add green onions, lemon juice, parsley, and mustard. Cook, stirring constantly, for 1 minute. Whisk in broth, and stir until smooth.
  5. Return chicken to skellet, heat until warm through. Serve.
